Shoppers at Target stores can buy Baked by Melissa cupcake kits starting this Sunday, marking the company's first foray into the at-home baking aisle. The exclusive launch includes three specific flavors: Christmas Tie-Dye, Marshmallow Hot Cocoa, and Red Velvet. Each kit comes with liners and a dedicated cupcake pan, maintaining the brand's signature bite-size portion size. This product line is designed for consumers who want to bake the specific style of minicupcakes associated with the New York City chain in their own kitchens.
The arrival of these products follows a year of development for a brand that operates on a rapid social media pace. Melissa Ben-Ishay, the founder and president of Baked by Melissa, told CNBC that the idea solidified during a trip to Target with her two children approximately one year ago. She stated that seeing the baking aisle made her realize the brand should be there. Ben-Ishay noted that she enjoys baking cake mix and believes it can taste better than the finished product. She described the retail process as involving a lot of waiting, approvals, and new partners, a stark contrast to the speed required for other brand activations.
Baked by Melissa was founded in 2008 and currently operates nine permanent locations in the New York area. The company also ships its minicupcakes nationwide. Ben-Ishay has built a following of more than 2.8 million on TikTok, where the account shares popular recipe videos, including one for green goddess salad dressing. This social media presence has facilitated collaborations with major brands such as Ferrero and Wonder. The company had previously produced Knicks-branded minicupcakes within days of the team winning the NBA championship in June, a feat that highlights the agility of the brand compared to the slower timeline of retail shelf placement.
The entry into grocery retail aligns with a wider trend among food service companies to expand into consumer packaged goods. Established chains like California Pizza Kitchen and TGI Fridays have licensed their brands for frozen foods for decades. More recently, major chains including Chick-fil-A and Dutch Bros have increased their presence in grocery products. For smaller, regional brands like Momofuku or Carbone, securing shelf space helps extend brand reach. It allows consumers to try the food without making a reservation and at a lower cost than dining out.
Target is moving to secure this partnership as it prepares for the critical holiday shopping season. The retailer is looking to win back its core customer base after a disappointing holiday season last year. Ben-Ishay pointed out that the typical Target shopper mirrors her own demographic. She is a 42-year-old mother of two who frequently shops at the store. The cupcake kits are positioned to appeal directly to this audience during the upcoming two-month period leading up to the holidays.
